I remember conducting Father-Son Camps and Football Camps with the high school football team that I coached in the eighties. My wife taught me a lot about how to orchestrate those camps because she had grown up in her dad’s summer camp, Camp Miles Sylvania, where he taught kids how to train, groom and show Tennessee Walking Horses. One of the most important things I learned was how important good food was to the mood, and consequently the success of the program. Well at Capstone, we’ve reached the pinnacle in this area.

Several years ago when looking for a cook, I started kidding the staff that I really wanted to hire a retired Navy cook, a man who loved God and his family, and wanted to spend the rest of his life fighting for the futures of our boys at Capstone. This was always met with a chuckle by both me and the staff. After several weeks, Ben Etheridge, Capstone’s Business Operations Manager at the time, brought me a resume from a retired Navy cook from Connecticut. I laughed while accusing Ben of making it up. Ben didn’t laugh back because it was for real. God gave us just what we needed and did so in His mysterious ways with a sense of humor.

Scott Hunt retired from the US Navy in 2004, after serving 20 years on the submarine force. He had promised his wife Kathy that, after retirement, they would move to a place of her choice to raise their beautiful daughters Brittney and Brianna. Kathy grew up in Searcy and when her father saw a Capstone ad for a cook in a local church bulletin the doors started opening.

Scott Hunt is a perfect fit for Capstone because he is the kind of Christian man that we are trying to get our young men to grow up and be like. Scott is not only is a great cook, he’s a bona fide chef (he makes his bread from scratch even hamburger buns, his lasagna from scratch, Philly cheese steak sandwiches, barbecue ribs, rib-eye steaks, homemade cinnamon rolls…I could go on and on). He loves the boys and wants them to become strong Christian men. One of my highlights during a day at Capstone is to watch Scott watch the boys eat. He takes such pride in serving the boys, their parents, and all of the staff. If the rest of us were as good at our job as Scott is, we’d be perfect.

If you are a parent and you come to Capstone someday, you’ll eat with us and then you’ll remember the things I wrote about Scott Hunt. Thank you Lord for Scott!
